Made the long way, on purpose
A kulcha is only as good as the minute it comes off the tawa. So we do not batch them, we do not hold them under a lamp, and we do not start one until you order it.
The masalas are ground here, in small lots, because pre-ground spice loses its nose within weeks. The halwa and the gulab jamun are made each morning and whatever is left at close does not come back tomorrow.

Amritsari Kulcha
Layered, crisped on the tawa and finished with butter. Served with chhole, chutney and a raw onion salad.

Patty Kulcha
Spiced potato patty folded into the dough before it goes on the tawa. Heavier, and worth it.

Paneer Kulcha
Fresh paneer, green chilli and coriander. The one regulars order without looking at the menu.

Bhature Chhole
Puffed bhature straight from the kadhai with slow-cooked chhole. Order it hot or it is not the same.

Gol Gappe
Crisp shells, spiced water, tamarind and potato. Assembled at the counter so they never go soft.

Maa Parantha Thali
Parantha, dal makhani, seasonal sabzi, curd, pickle and a sweet. A full plate, not a sample.
